Our favorite amateur chef, Terry Pomerantz, offers a recipe for a truly refreshing veggie and couscous summer salad, an easy to make couscous summer salad that is very tasty and inexpensive.
Ingredients for the Couscous and Veggie Summer Salad Recipe
- 1 ½ cups of couscous
- ¼ cup olive oil
- ½ tablespoon of Dijon mustard
- ½ teaspoon of honey
- 1 teaspoon of lemon zest
- 3 teaspoons of lemon juice
- 1 cucumber, diced
- 1 tomato, diced
- 1 yellow pepper, diced
- 1 grated carrot
- ½ cup of raspberries
- ½ cup of strawberries
- ½ cup fresh herbs (Italian parsley, basil, mint)
- ¼ cup of nuts (almonds, pecans, pine nuts)
How to Prepare the Veggie and Couscous Summer Salad
- In vegetable broth, cook the couscous according to the instructions on the box, according to the brand you purchased;
- Add a bit of butter and salt to taste;
- In a large bowl, mix olive oil, Dijon mustard, honey, lemon zest and juice;
- Add in the cucumber, yellow pepper, grated carrot and fresh herbs;
- Add salt and pepper and stir;
- Add in the nuts, strawberries and raspberries;
- Poor mixture over the couscous, mix and serve.
Wines to Pair with the Veggie and Couscous Summer Salad

It doesn’t matter if it is a Quebec wine, a French, Italian or American wine, a rosé from Provence, a White from the Eastern Townships or a red from Tuscany. The best wine to drink in the summer with your veggie and couscous summer salad is always the wine you love!”
As for Terry, with his summer couscous salad he enjoys a light red like a Merlot, or a full-bodied white, like a Chardonnay.
