Barbecue Brunch: 6 Easy Recipes for a BBQ Brunch

1- Omelette and roasted baby potatoes

Ingredients

  • 4 eggs
  • A pinch of baking soda*
  • 75 ml of 35% cream
  • 250 ml of grated cheddar from Île-aux-Grues
  • 1 diced tomato
  • Sliced white mushrooms, to taste
  • Diced jalapeño, to taste
  • Salt and pepper

*Tip: baking soda gives your omelette a light and fluffy texture.

Preparation

  • Crack the eggs into a large bowl, pour in the cream, add a pinch of baking soda and whisk vigorously.
  • Add the tomato, jalapeño and mushrooms.
  • Pour the mixture onto an oiled baking sheet placed on the barbecue grill.
  • Cover and cook over medium heat for about 10 minutes.

Roasted baby potatoes

Ingredients

  • 20 baby potatoes, halved
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Preparation

  • Mix all ingredients in a large bowl.
  • Wrap the potatoes in a large sheet of aluminum foil.
  • Cook on the barbecue for about 5 minutes at medium temperature.

Toasted baguettes

They go hand in hand with the omelette. With jam or honey, they add the sweet touch every BBQ brunch needs.

Ingredients

  • 1 French baguette
  • Butter

Preparation

  • Cut the baguette into 3 sections and slice each lengthwise in half.
  • Lightly butter the cut side.
  • Toast gently, cut side down, on the cooler part of the barbecue grill.

  • Commercial pork and beef sausages (as needed)

Cooking

  • Always cook sausages slowly over medium-low heat to prevent bursting or burning.

3- Beef salami

  • Beef salami logs (quantity depending on guests)
  • Mustard (your choice)
  • Spices (your choice)

Preparation

  • Coat the salami logs with mustard and spices.
  • Slice the logs lengthwise into ¼-inch thick rounds.
  • Grill lightly at low temperature for 5 to 10 minutes.

4- BBQ brunch for carnivores

Surrounded by carnivores? The grill brunch is perfect for their hearty appetites. On the menu: bacon, sausages, beef salami, ham steaks and even filet mignon.

Serve with omelettes, roasted potatoes and garden salad with a few strawberries.

Ingredients

  • 6 to 9 ripe tomatoes
  • 1 cucumber
  • 1 red bell pepper
  • 1 red onion
  • 3 crushed garlic cloves
  • Red wine vinegar
  • Olive oil
  • Salt and pepper

Preparation

  • Chop the vegetables and mix in a large bowl.
  • Add the garlic, red wine vinegar and olive oil.
  • Blend until smooth. Add cold water if needed.

6- Grilled kiwi parfait

Why not end the brunch with a grilled kiwi parfait?

Ingredients

  • 3 kiwis, peeled and halved
  • 2 tsp vegetable oil
  • 3 cups Greek yogurt
  • 1 tsp lime zest
  • 2 cups granola
  • 2 tbsp honey

Preparation

  • Toss the kiwis with the oil.
  • On the grill, over medium-high heat, grill each half cut side down for 2 minutes per side.
  • Mix the yogurt with the lime zest.
  • Divide the yogurt into 6 glasses.
  • Top with granola and grilled kiwi halves.
  • Drizzle each parfait with honey.
