Mom Pomerantz’s Pot-Au-Feu, a Traditional Pot-Au-Feu Recipe

“My mother’s traditional pot-au-feu recipe is essentially the same as that of hundreds of Québécois mothers. It is an easy recipe to prepare. In a large pot, Mom would mix beef chunks, fresh vegetables, inspiration, and improvisation, then let everything simmer for several hours. And pot-au-feu is even better when reheated!” (Terry Pomerantz)

Ingredients for the Traditional Pot-Au-Feu

  • 1 kg of cubed beef
  • ¼ cup of butter
  • 1 bottle of blond beer
  • 2 large potatoes, diced
  • 5 carrots, sliced
  • 2 celery stalks, sliced
  • 1 chopped onion
  • 2 minced leeks
  • 3 minced garlic cloves
  • Salt and pepper to taste.

Preparation

  • Cover the beef cubes in flour.
  • Chop the onion.
  • In a large pot, brown the beef cubes in butter.
  • Set the beef aside.
  • In the same pot, sauté the onion and garlic. Add more butter if needed.
  • Deglaze the pot with the beer.
  • Add the browned beef, carrots, potatoes, celery, and leeks.
  • Add enough water to cover the meat.
  • Bring to a boil.
  • Simmer on low heat for 3½ to 4 hours, adding water as needed to keep the meat covered.
