Butterfly (or Spatchcock) Chicken Recipe

What is BBQ butterfly chicken?

Instead of purchasing a butterfly chicken from the grocery store, Terry Pomerantz prefers buying a fresh grain fed chicken from his local butcher and preparing it himself.

“Butterfly chicken (otherwise known as spatchcock or flattened chicken) is simply a whole chicken that has been flattened. To give it its shape, I remove the spinal cord with a well sharpened knife or good kitchen scissors that can cut through small chicken bones. Once the spinal cord is removed, I turn over the chicken and flatten it as much as possible.”

Because of its flattened shape, butterfly chicken requires less time to cook than a regular whole chicken.

Terry offers 2 butterfly chicken recipes on the barbecue and one Air Fryer fried chicken recipe.

Oven baked BBQ butterfly chicken

Ingredients

  • 3 to 3.5-pound chicken (1.5 kg)
  • 5 teaspoons homemade BBQ sauce.

Dry homemade marinade

When Terry Pomerantz cooks a BBQ butterfly chicken in the oven, he uses his homemade dry marinade.

BBQ Sauce

  • 2 cups of ketchup
  • 3 tbsp brown sugar
  • 2 tbsp soy sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp balsamic vinegar
  • 3 minced garlic cloves
  • Cayenne pepper, to taste

Preparing the butterfly chicken

  1. Remove the spine from the chicken so that it can be opened and flattened.
  2. Sprinkle top and bottom of the chicken with the homemade dry marinade.
  3. Place the chicken on a plate and let sit all night in the fridge.

 

Cooking the BBQ butterfly chicken in the oven

  1. Preheat oven to 350 o
  2. Brush chicken with olive oil.
  3. Cook in the oven 1 to 1.5 hours, until the meat is crispy.
  4. Make sure that the meat is not
  5. The internal temperature of the thigh should be at least 170 o

Preparing the homemade BBQ sauce

  1. In a bowl, mix all of the ingredients until smooth.

Recipe for butterfly chicken cooked on the barbecue

  1. Remove the chicken backbone with a chef’s knife.
  2. Open up the chicken and flatten it.
  3. Rub the chicken with lemon.
  4. Cover the chicken with the homemade BBQ rub.
  5. Place the chicken in a storage container.
  6. Let it sit in the fridge for 12 hours.

Cooking the butterfly chicken over the barbecue

  1. Heat half of the barbecue on high heat.
  2. Oil the grille on the unheated side.
  3. Place the chicken on the unheated side of the barbecue.
  4. Cook the chicken for 45 minutes.
  5. Turn the chicken and keep cooking for 35 minutes.
  6. Make sure the internal temperature in the chicken thigh reaches 180 o F and that the meat is not

BBQ butterfly chicken fried in the Air Fryer

Because of the size of the basket in the Air Fryer, it can be really hard to cook a butterfly chicken. Terry prefers giving you a chicken recipe fried in the Air Fryer.

Ingredients

  • 5- pound (2 kg) chicken (choose a chicken that fits in the air fryer basket)
  • 3 tbsp of olive oil
  • 2 tbsp of homemade BBQ seasoning
  • 1 medium onion
  • 2 Quebec garlic cloves

Preparation

  1. Preheat the air fryer to 350 o
  2. Mix olive oil and spices.
  3. Brush chicken on both sides with the oil/seasoning mixture.
  4. Cut the onion into quarters.
  5. Place onion quarters and garlic cloves inside the chicken.
  6. Place the chicken in the air fryer.
  7. Cook for 30 minutes.
  8. Turn the chicken and cook for 15 to 20 minutes more, until internal temperature reaches 180 o

Wine

Terry suggests serving a good dry red wine with your BBQ butterfly chicken or your chicken fried in the air fryer.
